  • 1 cup cold coconut water Hydrating and subtly sweet.
  • 1 cup strawberries (hulled) Adds a refreshing tartness and vibrant color.
  • 2 cups apricots, pitted (about 3/4 lb) Sweet and juicy, they’re the star of this smoothie!
  • 1 cup frozen pineapple Gives a tropical twist.
  • 1 tsp flax seed oil Optional, for a nutrition boost.

Instructions
 

Preparation

  • Gather all your ingredients on the counter. Make sure your strawberries are hulled and your apricots are pitted.
  • If using fresh apricots, wash them thoroughly. Have frozen pineapple ready without thawing.
  • Measure out the coconut water and flax seed oil.

Blending

  • In a blender, combine the coconut water, strawberries, apricots, and frozen pineapple.
  • If using flax seed oil, add it now.
  • Blend on high until everything is smooth and creamy, adjusting consistency with more coconut water as needed.

Serving

  • Pour the smoothie into tall glasses or fun smoothie bowls.
  • Optional: Garnish with a slice of strawberry or a sprinkle of flax seeds.
  • Enjoy with a straw or a spoon!

Notes

Freeze strawberries and apricots the night before for extra chill. You can swap fruits, make in advance for 24 hours and store in the fridge.
