For the Slaw

Instructions
 

Marinate the Chicken

  • In a bowl, combine soy sauce, hoisin, sesame oil, rice vinegar, honey, ginger, and garlic. Add the finely diced chicken, tossing to coat evenly. Let marinate for at least 20 minutes while you prepare the other components.

Prepare the Wonton Shells

  • Heat oil to 350°F in a deep skillet. Using tongs, gently fold each wonton wrapper in half and fry for 30–60 seconds until they’re golden brown and crisp. Remove and drain on paper towels to absorb excess oil.

Cook the Chicken

  • Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the marinated chicken and cook for 5–7 minutes, stirring occasionally, until fully cooked and the sauce reduces into a glossy glaze.

Make the Slaw

  • In a bowl, combine cabbage, carrots, cilantro, rice vinegar, sesame oil, and salt. Toss lightly to keep the slaw crisp and refreshing.

Prepare the Sauce

  • In a small bowl, whisk together sweet chili sauce, mayonnaise, and lime juice until smooth and incorporated.

Assemble the Tacos

  • Spoon the warm chicken mixture into the crispy wonton shells. Top each taco generously with the fresh slaw and drizzle with the sauce. Serve immediately.

Notes

Use a thermometer to ensure the oil temperature is just right for frying. Choose fresh, crisp veggies for your slaw for that perfect crunch. You can prepare each component and store separately in the fridge, assembling right before serving for maximum freshness.
