Instructions
 

Preparation

  • Reduce the apple cider by heating it in a medium-sized pot over medium heat until it reduces to 2 tablespoons, about 25 minutes. Let it cool for about 15 minutes.
  • Preheat the oven to 350°F and line baking sheets with silicone baking mats or parchment paper.

Making the Dough

  • In a bowl, use an electric mixer fitted with a paddle attachment to beat the butter, sugar, and brown sugar until fluffy, about 3 minutes.
  • Beat in the egg and the reduced, cooled apple cider until well incorporated.
  • In a small bowl, stir together the salt, flour, cream of tartar, and baking soda. Gradually beat this mixture into the butter mixture, about ½ cup at a time.

Coating & Baking

  • In another small bowl, stir together all coating ingredients.
  • Scoop the dough into tablespoon-sized round balls, roll them in the coating, and place them on the prepared cookie sheets, about 2.5 inches apart.
  • Bake for 10 minutes, or until the tops are golden brown. Let them cool on the cookie sheets for about 2 minutes before transferring them to a cooling rack.

Notes

Make sure to use room temperature ingredients for a fluffy texture. Do not over-beat the dough after adding the flour mixture. Keep an eye on the baking time for optimal texture.
