Preparation

  • In a large bowl or stand mixer, mix together flour, potato flakes, powdered milk, sugar, yeast, and salt.
  • Add milk, eggs, and yolks; mix for 15 seconds until combined.
  • Add melted butter and mix until a sticky dough forms.
  • Let the dough rest for 20 minutes to relax.
  • Knead for 8 minutes until smooth and elastic, adding flour if necessary.
  • Oil a baking pan, place the dough inside, cover, and let it rise until doubled in size.

Assembly

  • Roll out the dough into a rectangle on a floured surface.
  • Brush melted butter over the rolled dough, then sprinkle with the filling mixture, leaving a border.
  • Cut the dough into strips and roll each into a pinwheel shape.
  • Place the rolls in the prepared pan and pour heavy cream over them.
  • Let the rolls rise for 20-30 minutes until puffy.

Baking

  • Bake in a preheated oven at 350°F for 18-22 minutes until golden brown.
  • In a bowl, cream together cream cheese and butter, then add sugar, heavy cream, vanilla, and salt until smooth.
  • Spread the icing over the warm rolls for a delicious finish.

Notes

Ensure yeast is fresh for optimal rise. Knead until smooth but slightly tacky, avoid too much flour. You can prepare rolls the night before and refrigerate overnight. Let rolls cool slightly before frosting to avoid melting the icing.
