For Grilling

  • 1 medium fresh pineapple Brings natural sweetness and juiciness.
  • optional amount thinly sliced green onions Offers freshness and a pop of color.

Instructions
 

Preparation

  • In a large zip-top plastic bag, combine all ingredients except the pineapple and green onions.
  • Seal the bag and smoosh around to ensure the chicken is evenly coated with the marinade.
  • Place the bag in the fridge and let it marinate for at least 30 minutes or overnight.

Grilling

  • Lightly oil the grill grates and preheat the grill to medium-high heat (about 375°F or 190°C).
  • Remove the chicken from the bag and place it on the hot grill.
  • Dunk the pineapple spears into the bag with remaining marinade and place them on the grill.
  • Safely dispose of the bag with the used marinade.
  • Cook the chicken for about 5 minutes with the lid closed, then flip and cook for another 4 to 5 minutes until fully cooked.
  • Rotate the pineapple every 2 to 3 minutes until caramelized and grill marks appear.

Serving

  • Garnish the chicken with green onions if desired and serve immediately for the best flavor.

Notes

For the best results, use high-quality chicken, taste the marinade before adding the chicken, and ensure it reaches an internal temperature of 165°F.
