  • 1/2 cup Sweet potatoes Optional for a touch of sweetness and nutrients.

Instructions
 

Preparation

  • Preheat air fryer to 350°F.
  • Lightly brush olive oil onto one side of the tortilla.

Cooking

  • Place the tortilla oil side down in the air fryer basket.
  • Spread half of the shredded cheese on the tortilla, then top with spinach and chicken, and finish with the remaining cheese.
  • Fold the tortilla in half to create a quesadilla.
  • Air fry for about 8 minutes, flipping halfway through.

Serving

  • Enjoy with guacamole, salsa, and sour cream or plain Greek yogurt.

Notes

You can swap fillings based on your preference, and feel free to experiment with different cheeses and vegetables. Allow the quesadilla to sit for a minute before cutting to help the fillings set.
