  • 2 tablespoons butter Provides creaminess that helps carry the flavors.
  • 2 teaspoons fresh, coarsely ground black pepper The star ingredient that adds heat and depth.

Cheese and Garnish

  • 3/4 cup finely grated Parmesan cheese or Romano cheese Offers a sharp, nutty flavor that deepens the dish.
  • 1 tablespoon finely chopped parsley (optional) Freshness that brightens the presentation.

Preparation

  • Add 4 cups of water to a large pot or high-sided skillet along with the kosher salt. Bring to a boil.
  • Once boiling, cook the pasta for two minutes less than the package instructions for a firm texture.

Heating the Sauce

  • While the pasta cooks, heat a large sauté pan over medium heat. Add the extra virgin olive oil and butter, then toss in the black pepper as the butter melts.
  • Stir until the delightful aroma of pepper fills your kitchen.

Combining Ingredients

  • When the pasta is just 2-3 minutes from being done, reserve 1/2 cup of pasta water and then add the pasta to the olive oil mixture. Stir to combine.
  • Use tongs to transfer the pasta directly to the sauce, ensuring to reserve some pasta water to maintain creaminess.
  • Cook the pasta in the sauce for an additional 1-2 minutes, adding the reserved pasta water as needed until the sauce thickens.

Finishing Touch

  • Remove the pan from heat and sprinkle half of the grated cheese over the pasta. Toss gently to coat all strands, adding more pasta water if necessary for creaminess.
  • Taste the dish and adjust seasoning, adding more black pepper if desired. If using parsley, sprinkle it over the top before serving hot.

Notes

Serve immediately with a fresh green salad or crusty bread. Leftovers can be stored in the refrigerator for 3-4 days and can be frozen for up to 3 months.
