Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour an 8 or 9-inch round cake pan.
  3. In a mixing bowl, combine the eggs, egg yolk, and granulated sugar and beat for about 5 minutes until light and fluffy.
  4. Add the cooled melted butter (or oil) and vanilla extract, and beat for 1 minute to combine.
  5. Stir in the grated zucchini until just combined.
Mixing
  1. Sift in the cake flour and baking powder, followed by the finely chopped nuts and salt. Beat for 1 minute until well combined, being careful not to over-mix.
Baking
  1. Pour the batter into the prepared cake pan, smoothing out the top.
  2. Bake for approximately 45-60 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Allow the cake to cool in the pan for about 15-20 minutes before transferring it to a wire rack to cool completely.
  2. Dust with powdered sugar just before serving.

Notes

Ensure eggs are at room temperature and use fresh, high-quality zucchini. Grate the zucchini finely for seamless incorporation. Letting the batter rest before baking enhances flavors.
