  • 1 cup Peppers (sliced, mix of green, yellow, orange and red)
  • ½ cup Pink Onion (sliced)
  • ½ cup Carrots (sliced)
  • 1 cup Mushrooms (halved)
  • 2 tbsp Garlic (minced)
  • 2 tbsp Olive/Sesame Oil For sautéing
  • 1 tsp Salt
  • 1 tsp Pepper powder
  • 2 cups Water For boiling noodles
  • 1 tsp Roasted sesame seeds For garnish

Method

Preparation of Sauce
  1. In a medium bowl, whisk together the dark soy sauce, vinegar, hot sauce (or Sriracha), honey (or maple syrup), brown sugar, garlic powder, ground ginger, and cornstarch.
Cooking Noodles and Vegetables
  1. Cook the thin wheat noodles according to the package instructions; they should be tender yet firm.
  2. In a large skillet or wok, heat the olive or sesame oil over medium heat. Add the minced garlic, and let it sizzle.
  3. Toss in the sliced peppers, pink onion, carrots, and mushrooms. Sauté until the vegetables begin to soften.
  4. Pour in the sauce, and stir until it thickens slightly.
  5. Add the cooked noodles to the pan and toss gently to combine everything.
  6. Season with salt and pepper, and garnish with roasted sesame seeds and spring onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of water to keep them from drying out. Feel free to customize with seasonal vegetables.
