  • 1 ½ lb skinless chicken thighs (cut into 1-inch size pieces) Juicy and flavorful option for skewering.

Method

Preparation
  1. In a small bowl, mix together yogurt, olive oil, lemon juice, garlic and ginger paste, red chili powder, ground cumin, garam masala, salt, turmeric, and black pepper until smooth.
  2. Pour the marinade over the chicken pieces in a large bowl. Make sure all the pieces are well coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill pan or griddle over medium heat.
  4. Thread the marinated chicken pieces onto wooden or metal skewers, spacing them evenly.
Cooking
  1. Place the chicken skewers on the grill or griddle and cook for 8-10 minutes, turning frequently until golden brown and cooked through.
  2. Remove the skewers from the heat and garnish with freshly chopped cilantro and lemon wedges.

Notes

Always marinate for at least 30 minutes and avoid overcrowding the skewers for even cooking. Soak wooden skewers in water to prevent burning.
