Ingredients

Base Ingredients
  • 1 cup cooked rice, cooled and well mashed Ensure the rice is well mashed for uniform texture.
  • 2 teaspoons Active Dry Yeast This will help the fritters rise, creating a light and fluffy center.
  • 1/4 cup warm water (110°F – 120°F) The warm water will activate the yeast.
  • 3 large eggs, whisked Adds richness and binds everything together beautifully.
  • 1/3 cup granulated sugar A touch of sweetness to balance the flavors.
  • 1/2 teaspoon kosher salt Enhances the overall flavor.
  • 1/2 teaspoon ground cinnamon Adds warmth and comforting flavor.
  • 3/4 cup all-purpose flour Thickens the batter and provides structure.
  • 4 cups vegetable oil for frying Essential for that crispy exterior.
  • 2 cups powdered sugar for coating Dusted on top for sweetness.

Method

Preparation
  1. Place the mashed rice into a medium bowl and set aside.
  2. Sprinkle the yeast into warm water and let it dissolve until foamy for about 10 to 15 minutes.
  3. Pour the yeast mixture into the mashed rice, stirring gently to combine.
  4. Cover with plastic wrap and refrigerate for eight hours or overnight.
  5. Remove the rice mixture from the refrigerator and add the whisked eggs, sugar, salt, and cinnamon. Mix until well combined.
  6. Fold in the flour until the batter thickens.
  7. Cover the mixture with a towel and let it rise in a warm place for an hour until bubbly and airy.
Cooking
  1. Heat the oil in a Dutch oven or electric fryer, aiming for 365°F.
  2. Drop the batter by heaping tablespoon into the hot oil and fry until golden brown.
  3. Turn the fritters once to brown evenly, then transfer them to a paper towel-lined plate.
  4. Work in small batches to avoid overcrowding the frying pan.
  5. Place the powdered sugar in a large zip-top bag, add half of the fritters, and shake to coat. Repeat with the remaining fritters.
