Ingredients

Main Ingredients
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • Salt & pepper (to taste)
  • 1 medium yellow onion (chopped)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 32-oz container beef broth Consider starting with half for a heartier soup.
  • 1 15-oz can tomato sauce
  • 1 32-oz bottle tomato juice
  • 1 large green pepper (cored and diced)
  • 1 large red pepper (cored and diced) Or use 2 red/2 green, whichever you prefer!
  • 1 cup parboiled rice (uncooked)
  • Garnish: grated Parmesan cheese

Method

Preparation
  1. Gather your ingredients and ready your 5-6 quart pot or Dutch oven.
  2. Add the olive oil to your pot over medium heat.
  3. Toss in the ground beef, letting it sizzle and brown beautifully. Season with salt and pepper.
  4. Once browned, drain any excess grease. Add the chopped onion and soften for about 5 minutes.
Cooking
  1. Stir in the Italian seasoning, garlic powder, tomato paste, and Worcestershire sauce.
  2. Add the beef broth, tomato sauce, and tomato juice. Toss in the diced peppers, scraping the bottom of the pot.
  3. Bring to a gentle boil, then reduce the heat and simmer for at least 30 minutes, partially covered.
  4. Stir occasionally. After 30 minutes, add the uncooked rice and simmer for another 15-20 minutes until the rice is tender.
Serving
  1. Taste and adjust seasoning. Serve immediately, topping with grated Parmesan cheese.

Notes

This soup can serve as a versatile dish; feel free to add other vegetables like corn or zucchini. It can be frozen and reheated, and can be made with turkey or chicken for a lighter option.
