Custard Base
  • 1 cup Vegan milk Acts as a custard base for soaking the bread; choose your favorite type.
  • 2 tbsp ground flax meal Used as a thickening agent, it also increases nutritional value.
  • 1 tbsp maple syrup Adds a touch of sweetness to the custard.
  • 1 tsp ground cinnamon Infuses a warm spice that rounds out the flavors.
Main Ingredients
  • 8 slices thick sandwich bread The perfect base, adds heartiness and substance.
  • 2 tbsp vegan butter or neutral oil For cooking, ensures a golden-brown crust.
  • 1 cup Fresh berries For serving, adds a fresh, colorful garnish.

Method

Preparation
  1. In a small bowl, mix the vegan cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  2. Add the sliced strawberries to a bowl and stir in the sugar. Let stand for about 10 minutes to soften and release their juices.
  3. In a shallow bowl, combine the vegan milk, ground flax meal, maple syrup (if using), vanilla extract, and cinnamon. Let sit for 2-3 minutes to thicken slightly.
Assembly
  1. Lay out the bread slices. Spread the cream cheese mixture over three slices, leaving a ⅓ inch border. Top with sliced strawberries and cover with the remaining slices to form sandwiches, gently pressing to seal.
  2. Quickly dip each sandwich into the custard on both sides, avoiding soaking.
Cooking
  1. Heat a large skillet or griddle over medium heat. Add vegan butter or oil.
  2. Cook each sandwich for 3-5 minutes per side, until golden brown and warmed through. Adjust heat as needed to prevent burning.
Serving
  1. Remove from skillet and serve warm, drizzled with maple syrup and topped with fresh berries.

Notes

For best results, use thick slices of bread and let the cream cheese filling come to room temperature before mixing. Feel free to substitute strawberries with other berries as preferred.
