  • 2 steaks New York Strip or Rib-Eye Steaks Juicy cuts for protein and flavor
  • 2 sprigs Fresh Thyme or Rosemary Adds aromatic herbaceous notes

Method

Phase 1 - Prep
  1. Gather your ingredients: avocado oil, ghee, baby potatoes, garlic, salt, pepper, steaks, and herbs.
  2. Preheat your oven to 425°F (220°C).
  3. Rinse the baby potatoes under cold water, then halve them.
  4. Mince the garlic and set aside.
Phase 2 - Cook/Assemble
  1. In a large bowl, toss the halved baby potatoes with avocado oil, garlic, salt, and pepper until well coated.
  2. Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes, flipping halfway through.
  3. While the potatoes roast, heat ghee in a skillet over medium-high heat and season the steaks with salt and pepper.
  4. Cook the steaks for about 4-5 minutes on each side for medium-rare.
  5. In the last minute of cooking, sprinkle fresh herbs onto the steaks.
Phase 3 - Serve
  1. Remove the potatoes and steaks from heat and let the steaks rest for a couple of minutes.
  2. Slice the steak against the grain and serve alongside the crispy roasted potatoes.
  3. Garnish with additional fresh herbs if desired.

Notes

For crispier potatoes, spread them out on the baking sheet without crowding. Let the steak rest after cooking to retain juiciness. If short on time, use pre-cut baby potatoes.
