Main Ingredients
  • 1 medium spaghetti squash This is the star of our dish! Its slightly sweet flavor and texture resemble pasta.
  • 1 pound ground turkey (or ground beef) A hearty protein base that ensures your casserole is filling and nutritious.
  • 1 onion, chopped Forms the flavorful foundation of this dish.
  • 2 cloves garlic, minced Enhances the overall flavor.
  • 1 can (15 oz) diced tomatoes Brings moisture and acidity.
  • 1 teaspoon Italian seasoning For adding Italian flair to our casserole.
  • 1 teaspoon salt To elevate all flavors.
  • 1/2 teaspoon black pepper For subtle kick.
  • 1 cup shredded mozzarella cheese Brings creamy goodness.
  • 1/2 cup grated Parmesan cheese Adds depth and a touch of tang.
  • Fresh basil for garnish Brightens the dish.

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut-side down on a baking sheet and bake for 30-40 minutes until tender.
  3. In a large skillet over medium heat, add a splash of olive oil and sauté the chopped onion and minced garlic until soft and translucent, about 5 minutes.
  4. Add the ground turkey (or beef) to the skillet, cooking until browned, about 7-10 minutes.
  5. Stir in the can of diced tomatoes, Italian seasoning, salt, and pepper. Let everything simmer together for about 5-10 minutes.
  6. Once the squash is cool enough, scrape the strands into a bowl using a fork.
  7. Fold the squash strands into the meat mixture along with half of the mozzarella cheese.
  8. Pour the mixture into a greased baking dish. Sprinkle the remaining mozzarella cheese and Parmesan on top.
  9. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
  10. Let it cool for a few minutes, then garnish with fresh basil before serving.
