Preparation
- Preheat the oven to 350°F (175°C) and spray a 9x5 inch bread loaf pan with cooking spray.
- In a large bowl, whisk together the granulated sugar, brown sugar, flour, baking soda, salt, and pumpkin pie spice.
- Make a hole in the center of the mixture and add the pumpkin puree, eggs, oil, water, and vanilla.
- Stir everything together very well but try not to over-mix.
Cooking
- Scrape the batter into the prepared pan and place it in the oven.
- Bake for 60 minutes, then test the center with a toothpick.
- If the toothpick comes out clean, the bread is done. If not, add another 5 minutes and test again.
- Ensure the bread is fully done before removing it from the oven to prevent sinking as it cools.
Serving
- Enjoy warm slices of pumpkin bread with butter or cream cheese, or serve it as a dessert with ice cream.
Notes
Store in an airtight container at room temperature for up to five days or freeze for up to three months. Reheat slices in a toaster or microwave for a fresh-baked experience.
