Ingredients

For the filling
  • 4 Tablespoons unsalted butter Adds rich flavor; can substitute with olive oil for a lighter option.
  • 1 small onion, finely chopped Sweetens the filling and adds depth; shallots work beautifully here too.
  • 2 cloves garlic, minced Enhances the dish’s flavor; garlic powder may replace fresh in a pinch.
  • 1/4 cup all-purpose flour Thickens the filling; cornstarch can be a gluten-free alternative.
  • 2 cups chicken broth Provides moisture and flavor; vegetable broth keeps it plant-based.
  • 1/2 cup heavy cream Contributes to the creamy texture; half-and-half is a lighter option.
  • 1/2 teaspoon garlic powder An extra boost of flavor; omit if you prefer a milder taste.
  • 1/2 teaspoon onion powder Adds depth; skip if you don’t have it on hand.
  • 1/2 teaspoon salt Balances flavors; taste and adjust according to preference.
  • 1/4 teaspoon black pepper Adds a hint of spice; white pepper is a suitable alternative.
  • 1 teaspoon dried thyme Infuses the dish with aromatic flavor; fresh thyme is wonderful if available.
  • 1 1/2 cups frozen peas and carrots Adds a pop of color and nutrition; any frozen mixed veggies can work.
  • 3 cups cooked and shredded chicken The heart of the pot pie; left-over rotisserie chicken is perfect for this.
For the topping
  • 1 sheet puff pastry, thawed Creates that glorious flaky topping; make sure it’s pliable for easy use.
  • 1 large egg, beaten For egg wash; gives the pastry a golden sheen; brush with milk for a dairy-free option.
  • to taste Fresh parsley, chopped For garnish; brightens the dish; can include any fresh herbs you love.

Method

Preparation
  1. Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch casserole dish and set aside.
  2. In a large skillet or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook for about 5-7 minutes until softened. Stir in the minced garlic and let sizzle for just a minute until fragrant.
  3. Sprinkle the flour over the onions and garlic, stirring constantly to cook for about one minute.
  4. Gradually whisk in the chicken broth until smooth, then add the heavy cream. Allow to simmer until thickened.
  5. Stir in garlic powder, onion powder, salt, pepper, and dried thyme. Toss in the frozen peas and carrots followed by the shredded chicken, combining thoroughly.
  6. Pour this mixture into the prepared casserole dish.
Assembly and Baking
  1. Roll out the puff pastry on a lightly floured surface to fit the dimensions of your dish.
  2. Lay the pastry over the filling, tucking the edges into the dish. Brush with the egg wash and cut slits for steam to escape.
  3. Bake for 30-35 minutes until the pastry is golden brown and bubbly.
  4. Once done, let it cool for a few moments and garnish with fresh parsley.

Notes

Pair with a light salad or soup. Store leftovers in an airtight container in the fridge for up to three days. Reheat gently to maintain crispiness.
