Preparation
- Preheat your oven to 375°F.
- Poke holes all over the potatoes using a fork.
- Rub the potatoes with olive oil and sprinkle with kosher salt.
- Arrange the potatoes on a baking sheet and pop them into the oven.
- Bake for 1 hour or until the potatoes are soft and fork-tender.
Topping Preparation
- While the potatoes are baking, prepare the toppings by whisking the Greek Tzatziki sauce.
- Chop the fresh tomato and parsley, and crumble the feta.
Serving
- Remove potatoes from the oven and let them rest for 5 minutes.
- Slice each potato open, keeping the skin intact, and scoop the flesh into a bowl.
- Add a drizzle of olive oil, salt, pepper, and oregano to the potato flesh and mash it.
- Scoop the mashed potatoes back into the skins and top with Tzatziki, olives, feta, and fresh herbs.
- Serve and enjoy!
Notes
You can microwave the potatoes to speed up cooking, but oven-roasting gives the best quality. Feel free to get creative with your toppings.
