Method
Preparation
- Slice the boneless chicken thighs in half, trimming off any larger pieces of fat.
Seasoning
- Sprinkle the smoked paprika, cumin powder, onion powder, garlic powder, salt, and black pepper generously over both sides of the chicken. Rub the spices in thoroughly.
Cooking
- Heat 1 tablespoon of olive oil in a large skillet over high heat until it shimmers.
- Lay the chicken into the pan and reduce the heat to medium-high, cooking for about 8–10 minutes on one side.
- Flip the chicken over, add the remaining tablespoon of oil, and cook for another 8–10 minutes until golden brown.
- In the final minute of cooking, drizzle over the honey and lime juice, allowing it to caramelize slightly.
Serving
- Let the chicken rest for a moment before slicing or serving it whole.
Notes
For best flavor, use fresh limes. Serve with fluffy rice or over a spinach salad to soak up the glaze. Store leftovers in an airtight container for up to three days or freeze for later.
