For the Chicken Marinade
  • 3 pounds boneless, skinless chicken breasts, cut into 1-inch chunks Ensure it’s fresh for the best flavor.
  • 1 cup dill pickle juice This adds a flavorful tang.
  • 1/2 cup milk Use whole milk for a creamy batter.
  • 1 tablespoon hot sauce Adds a kick to the flavor.
For the Breading
  • 1 1/2 cups flour For a crisp coating.
  • 1 1/2 cups plain bread crumbs To create the perfect crispy exterior.
  • 1 tablespoon garlic powder
  • 1 tablespoon kosher salt To season everything beautifully.
  • 2 teaspoons black pepper Adds warmth.
  • 2 teaspoons paprika Gives color and a subtle smokiness.
  • 2 tablespoons powdered sugar For a hint of sweetness in the batter.
For Frying
  • 1 quart canola oil For frying perfection.

Method

Preparation
  1. Place the chicken chunks into a large zip-top bag.
  2. Pour in the dill pickle juice, milk, and hot sauce; seal the bag tight and give it a gentle massage.
  3. Let marinate in your refrigerator for at least 4 hours or overnight.
  4. In a large bowl, whisk together the flour, bread crumbs, garlic powder, salt, pepper, paprika, and powdered sugar.
  5. Drain the chicken from the marinade.
Cooking
  1. Coat the chicken chunks in the flavorful breading, ensuring they’re fully covered.
  2. Preheat your oven to warm and set aside a baking sheet.
  3. Heat the canola oil in a large Dutch oven over medium heat until it reaches 350°F.
  4. Carefully add the breaded chicken to the hot oil, fry in small batches for about 4-5 minutes until golden brown.
  5. Remove the nuggets with a slotted spoon and place them on the warm baking sheet in the oven while frying the rest.

Notes

Serve with various sauces like barbecue, ranch, or sweet-and-sour dip. For a healthier option, consider air-frying the nuggets.
