Ingredients

Main Ingredients
  • 1/2 cup granulated sugar Plus more for rolling, optional
  • 1/2 cup brown sugar
  • 1 cup creamy full-fat peanut butter Choose the creamiest for the best texture!
  • 1 large egg
  • 1 teaspoon vanilla

Method

Preparation
  1. Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
  2. Using an electric mixer, combine all the ingredients in a large mixing bowl and blend until smooth and thick, about 2-3 minutes.
  3. Scoop out balls of dough measuring about 1 & 1/4 inches, and roll them in your hands until soft and smooth.
  4. Optionally, roll the balls in granulated sugar for an extra sparkle before placing them on the baking sheet.
  5. Space the dough balls about 2 inches apart and press down on each with the back of a fork to create a criss-cross pattern.
  6. Bake for about 10 minutes, or until lightly browned, allowing them to stay warm and slightly soft upon removal.
  7. Let the cookies rest on the baking tray for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to 3 months. For variations, consider adding chocolate chips or cocoa powder.
