Ingredients

Main Ingredients
  • 1 small head small broccoli head (about 8 ounces) Make sure to choose a bright green head with no yellow spots.
  • 2 tablespoons extra-virgin olive oil Use this for brushing to enhance flavor and prevent sticking.
  • 2 scallions (diced) Green onions offer a refreshing crunch.
  • 1 clove garlic (minced) Fresh garlic infuses a warm, aromatic earthiness.
  • 2 tablespoons chopped cilantro stems Plus ½ cup leaves reserved for garnish.
  • ¼ teaspoon sea salt Essential for bringing out flavors.
  • to taste freshly ground black pepper Gives a lovely zing that balances the dish.
  • ¼ teaspoon ground cumin Offers a warm, earthy undertone.
  • 1 lime lime (zest and juice) Helps brighten everything up!
  • 1 cup cooked brown rice Optional for added richness and heartiness.

Method

Preparation
  1. Remove any tough, woody parts from the broccoli stalk. If the outer skin is particularly tough, peel it gently.
  2. Chop the remaining stalk and florets into 1-inch pieces.
  3. Place the broccoli pieces into a food processor and pulse until they resemble rice, yielding about 2 cups of 'riced' broccoli.
Cooking
  1. Heat a nonstick skillet over medium-low heat and brush it generously with olive oil.
  2. Add the freshly riced broccoli, diced scallions, minced garlic, cilantro stems, sea salt, and a sprinkle of black pepper.
  3. Cook and stir for about 1 minute, just enough to warm but not overcook, ensuring the bright green color remains vibrant.
  4. Remove from heat and stir in the cumin, lime zest, and lime juice.
  5. If preferred, fold in the cooked brown rice.
  6. Taste and adjust seasoning, adding more salt or pepper as desired.
