  • 8 ounces Mushrooms (sliced) Earthy flavor and texture; baby portobello or cremini mushrooms work well.
  • 1 cup Riesling Wine The star of the dish that gives it a unique sweetness and pairs well with the main ingredients.
  • 1 cup Chicken Broth Adds moisture and depth; low-sodium broth makes for a healthier option.
  • to taste Fresh Herbs (such as thyme or parsley) Adds brightness; dried herbs can be used in a pinch.

Method

Preparation
  1. Heat 2 tablespoons of butter or olive oil in a large skillet over medium heat until melted and bubbly.
  2. Season 4 chicken breasts with salt and pepper, add them to the skillet, and brown for about 5-7 minutes on both sides until golden brown.
  3. Carefully remove the chicken from the skillet and set aside on a plate.
  4. In the same skillet, add 1 medium chopped onion and 4 minced garlic cloves. Sauté for 3-4 minutes until softened and aromatic.
  5. Stir in 8 ounces of sliced mushrooms and cook until browned and tender, roughly 5-6 minutes.
  6. Pour in 1 cup of Riesling wine and 1 cup of chicken broth, scraping up any browned bits from the skillet.
  7. Return the chicken to the skillet, cover, and let it simmer for about 20 minutes until cooked through and juices run clear.
  8. Stir in your choice of fresh herbs before serving to add a pop of color and freshness.

Notes

Avoid overcooking chicken; use a meat thermometer to ensure it reaches 165°F. This dish can be paired with steamed vegetables or rice for a complete meal.
