Ingredients

For the Brownie Pudding
  • 1/2 cup unsalted butter Creates a rich, creamy texture and enhances the chocolate flavor.
  • 2 extra large eggs Provide structure and contribute to the pudding's decadent consistency.
  • 1 cup granulated white sugar Balances the bitterness of cocoa and adds sweetness.
  • 1/3 cup cocoa powder Imparts that rich chocolate flavor and dark color.
  • 1 teaspoon espresso powder Optional but intensifies the chocolate's depth and richness.
  • 1/2 cup all-purpose flour Adds stability and binds the ingredients together.
  • 1/4 teaspoon salt Enhances overall flavor without being overpowering.
  • 1 teaspoon vanilla bean paste Infuses a warm, aromatic vanilla flavor into the pudding.
  • 1 teaspoon softened butter Used for greasing the baking dish for easy release.
  • 2 tablespoons framboise liqueur Optional for adding a fruity note that complements chocolate beautifully.
  • 2 scoops vanilla ice cream The perfect accompaniment to serve atop this warm dessert.

Method

Preparation
  1. Preheat the oven to 325°F and lightly butter an 8x8-inch baking dish.
  2. Use a microwave-safe dish to melt the butter, then set it aside to cool slightly.
  3. In the bowl of an electric mixer, beat the eggs and sugar on medium-high speed for 8-10 minutes until thick and light yellow.
  4. Sift cocoa powder, flour, espresso powder, and salt together and set aside.
  5. Reduce mixer speed to low, add vanilla bean paste and dry ingredients, mix until combined.
  6. Gradually incorporate the cooled butter, mixing just until combined.
Baking
  1. Pour the brownie mixture into the prepared dish.
  2. Place it in a larger baking pan and add hot tap water to the larger pan until it reaches halfway up the side of the dish.
  3. Bake for 40-50 minutes, checking for doneness by inserting a toothpick 2 inches from the side; it should come out 3/4 clean.
Serving
  1. Allow the brownie pudding to cool for 10-15 minutes in the water bath.
  2. Serve warm with a scoop of vanilla ice cream.

Notes

This brownie pudding is ideal for small households or quick treats without leftovers. Customize with chocolate chips or nuts, and consider pairing with fresh fruit or a drizzle of chocolate sauce.
