Method

Preparation
  1. Preheat your oven to 250°F (120°C) and line a half sheet pan with parchment paper. Place a wire rack on top.
  2. Slice the brioche into 3/4 to 1-inch thick slices and bake for 10-15 minutes until slightly stale.
  3. In a small bowl, whisk together the cornstarch with a bit of half and half to form a smooth paste. Combine with remaining half and half, eggs, sugar, salt, vanilla, zest, and spices in a shallow dish. Let rest for 5 minutes.
Cooking
  1. Soak each brioche slice in the custard for 10-15 seconds on each side.
  2. Place soaked slices on the wire rack to absorb additional custard for 5-10 minutes.
  3. Preheat a non-stick skillet on medium heat and set your oven to 300°F (150°C).
  4. Add butter to the skillet and cook soaked brioche slices for 2 minutes until golden brown, then flip and cook for another 2 minutes.
  5. Place cooked slices on the wire rack and repeat with remaining bread.
  6. Once all slices are cooked, place them in the oven for 15-20 minutes until thoroughly cooked.
Serving
  1. Serve warm with toppings like whipped cream, fresh fruits, and maple syrup.

Notes

Avoid soaking the bread too long to prevent mushiness. Ensure your skillet temperature is correct before cooking.
