Ingredients

Main ingredients
  • 3 pieces boneless skinless chicken breasts Feel free to use thighs for added tenderness.
  • 1 cup seasoned Italian breadcrumbs Substitute with panko for extra crispiness.
  • 1/2 cup grated Parmesan cheese Nutritional yeast can be a great vegan alternative.
  • 1 teaspoon garlic powder Fresh garlic can also be used for a more robust taste.
  • 1/2 teaspoon kosher salt Adjust to taste if you’re watching your sodium intake.
  • 1/2 teaspoon freshly ground black pepper Can be omitted for milder flavors.
  • 1/4 teaspoon ground paprika Smoked paprika can elevate the flavor further.
  • 1/3 cup mayonnaise or 4 tablespoons melted butter Greek yogurt works as a lighter alternative.

Method

Preparation
  1. Preheat your oven to 400 degrees F.
  2. In a large shallow bowl, combine the seasoned Italian breadcrumbs, grated Parmesan cheese, garlic powder, kosher salt, black pepper, and paprika.
  3. Carefully slice each chicken breast in half lengthwise to create thin fillets.
  4. Place the sliced chicken between plastic wrap and gently pound to about 3/8 inch thick.
  5. Brush both sides of each fillet with mayonnaise or drizzle with melted butter.
  6. Dredge each coated chicken fillet in the prepared breadcrumb mixture.
Cooking
  1. Arrange the breaded chicken on a greased baking sheet.
  2. Bake for 17 to 20 minutes, or until the chicken is fully cooked through and the crust is golden brown.
  3. Use a meat thermometer to ensure the internal temperature of the chicken reaches 165 degrees F.

Notes

To store leftovers, allow the chicken to cool before transferring to an airtight container. It can be kept in the refrigerator for up to 3 days or frozen for up to 3 months.
