Ingredients

Main Ingredients
  • 4 ounces almond paste Use fresh, high-quality almond paste for the best taste.
  • ½ cup granulated sugar Adjust based on your preference for sweetness.
  • ½ cup unsalted butter Softened for a smoother batter.
  • 3 large eggs At room temperature for optimal mixing.
  • ½ teaspoon almond extract Can substitute with vanilla extract if desired.
  • ½ cup all-purpose flour Sifted to aerate for a fluffier cake.
  • ½ teaspoon baking powder Check the expiration date for freshness.
  • ¼ teaspoon salt Balances the sweetness.
  • ½ cup sliced almonds Toast for added flavor.
  • 1-2 tablespoons granulated sugar Optional for sprinkling on top.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your baking pan with butter and flour, or line it with parchment paper.
  2. In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the almond paste and mix until creamy.
  4. Beat in the eggs one at a time until well combined.
  5. Stir in the almond extract until just combined.
  6. In another bowl, whisk together the flour, baking powder, and salt, then fold this into the wet ingredients.
  7. Stir in the sliced almonds.
  8. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until lightly golden and a toothpick comes out clean.
  2. Sprinkle with 1-2 tablespoons of granulated sugar just before serving, and let cool.

Notes

To elevate the flavors, consider toasting the sliced almonds before adding them to the batter. If you want to avoid overmixing, be gentle when folding in the dry ingredients.
